
Maguro (tuna)
Maguro is the most well-known and popular type of sashimi
because tuna is a readily available and commercially marketable
fish that Japanese people have favoured since ancient times.
Did you know that in Japanese there are three different
names for tuna meat, depending on which part of the fish
it is taken from?
"O-toro" is the choice fatty meat taken from
around the fish's belly area. It is the most expensive
as it is very succulent and almost seems to melt in the
mouth.
"Chu-toro" is the marbled meat taken from the
fish's lower belly area and is cheaper than o-toro. Its
exquisite combination of firm meat and marbling has made
it the most popular of the three types with Japanese people.
"Akami" is the redder coloured lean meat taken
from the fish's back. It is the cheapest of the three and
its simple and refreshing flavour combined, with its affordability,
make it the most popular type for home cooking.
In Japan sashimi is always eaten with a special soy-sauce
and wasabi, but many people often dissolve wasabi into
the soy-sauce, destroying its taste and characteristic
fragrance. For a more traditional and refined way of eating
sashimi, put a small amount of wasabi on to the middle
of the piece of sashimi with your chopsticks. Fold it in
two halves sandwiching the wasabi in the middle, and then
dip the two ends into the soy-sauce before eating. If you
have not eaten sashimi this way before, give it a try next
time.

Delicious recipe with soy
sauce
Grilled Soy Chicken
(serves 4)

4 chicken breasts, skin on
1/2 cup Kikkoman Less Salt Soy Sauce
1 tablespoon fresh lime juice
1 tablespoon mirin
Place chicken in a flat, non-metallic dish. Combine next
three ingredients and brush over chicken, covering both sides.
Marinate for 20 minutes while you prepare the dipping sauce.
Dipping
Sauce:
1/2 cup Kikkoman Less Salt Soy Sauce
1 clove garlic, crushed
15ml rice wine vinegar
1 teaspoon picked ginger, finely chopped
juice of 1 lime
2 tablespoons coriander, finely chopped
Place all ingredients in a bowl and whisk until combined.
Place in small individual serving bowls.
Meanwhile, preheat grill or barbecue and cook chicken, turning
occasionally, until the skin is crisp and the chicken is
cooked through. Serve on individual plates with the dipping
sauce.
