chicken
(deep-fried marinated chicken)
Simple to make and goes well with
a few beers. Tatsuta-age chicken is a traditional favourite
in bars across Japan.
Ingredients:
500g chicken pieces
cornstarch (enough to cover the chicken pieces)
3 tbsps soy sauce
2 tbsps wine (sake, cooking wine or white wine)
cooking oil (enough to submerge the chicken)
Directions:
1) Combine the soy sauce and wine
to make a marinade. Cut the chicken into bite-sized
pieces and marinate for approximately 10 minutes.
2) Remove the chicken from the
marinade and cover all pieces evenly with the cornstarch.
Let the pieces sit for two to three minutes to allow
the cornstarch to settle.
3) Deep-fry the chicken in oil
heated to a low temperature (165?~170?). The chicken
will float to the surface when it is cooked. Take
a piece and cut it in half to check it is cooked
all the way through.
4) Take the chicken pieces out
of the oil, remove the excess oil and serve.
5) Add your choice of sauce or
spice. Traditionally, it is topped with squeezed
lemon juice,
grated white radish and tempura dipping sauce, salt,
ginger juice or citron pepper.

Delicious recipe with Soy
Sauce
Steamed whole fish
with lime and lemongrass
(serves 4)
1kg whole white fish (or
2 smaller fish)
1/4 cup Kikkoman Less Salt Soy Sauce
1 stalk lemongrass, white part only, finely chopped
juice of 1 lime
4 sprigs fresh coriander, chopped
finely chopped chilli (optional)
Place fish on a large piece of well-oiled foil. Brush
the soy sauce over the top of the fish. Sprinkle the lemongrass
and lime juice over the fish and top with coriander and
the chilli if using.
Wrap foil around the fish and fold to seal at both ends
and at the top. Place in a bamboo or metal steamer over
a pan of simmering water and steam for about 15 minutes,
or until the fish flakes easily with a fork. Serve with
lime wedges if desired.
